Yummy Brownies


My good friend sent me this brownie recipe and it is one worth sharing! Special thank you to Karina Newmarch and Juice Plus+

Chocolate Zucchini Brownies


  • ½ cup peeled and finely grated zucchini
  • 1/3 cup coconut yoghurt
  • 1 cup and 2 tablespoons water
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons flaxseed meal
  • ½ cup and 2 tablespoons melted coconut oil
  • ¾ cup raw cacao powder (or Juice+ Complete Chocolate Protein)
  • 1 cup coconut flour
  • ½ teaspoon sea salt
  • ½ teaspoon baking powder
  • ½ cup coconut sugar
  • ½ cup mini dark chocolate chips or cocoa nibs to decorate


  1. Preheat over to 180 degrees Celsius
  2. Line a slice tin with greaseproof paper
  3. Mix the first 6 ingredients and let sit for 5 minutes
  4. Combine all other ingredients in a separate bowl and stir well
  5. Pour wet ingredients into dry
  6. Stir until evenly mixed then pour in to slice tin
  7. Decorate with chocolate chips or cocoa nibs
  8. Bake 20 minutes then pat down hard with a spatula to make the brownies denser
  9. Allow to cool before cutting into squares
