Breakfast Pancakes

I am often asked what my children eat before heading to school, so here goes… they’re on a ‘breakfast roster’ of oat and chia porridge made with coconut milk or nut milk with a sprinkle of cinnamon or apple on top, eggs anyway, or pancakes packed with goodness, plus a mandatory large cup of water and a scoop straight in their mouth of Akesi Probiotic+ Elderberry Boost… which is their favourite part!

Breakfast Pancakes

1/2 cup coconut flour

½ teaspoon baking powder

1 teaspoon cinnamon

1 pinch sea salt

1/2 tablespoon chia white seeds

3 large eggs

1/3 cup milk of choice

1 teaspoon pure vanilla

1 tablespoon coconut oil, plus extra for frying the pancakes

Sliced bananas, maple syrup or manuka honey for serving
